Creamy Mushroom Soup

Most of the households I’ve known don’t like Mushrooms.

But they have a great nutritional value and are linked to a variety of health benefits. Can't eat mushrooms? No problem! instead make this delicious soup - rich in fibre, proteins and antioxidants!

INGREDIENTS (For a bowl of Salad)

  • Chopped Mushrooms - 250 grams

  • Butter - 2 TSP

  • Chopped Onions - 1/3 Cup

  • Chopped Garlic - 4-5 medium cloves

  • Chopped Coriander for garnishing

  • Milk - 1Cup

  • Plain Flour (Maida) - 2 TSP

  • Pepper Powder

This recipe is quite simple and barring mushroom, everything you need is easily available in the kitchen.

For a detailed recipe, continue reading. Its a 3 part-recipe, and goes as the following -


Part 1: The Mushroom Toppings

  1. Take a cooking Tasla or Pan add some Olive oil

  2. Sauté the chopped Mushrooms on a medium flame for 4 to 5 minutes. Once softened, set aside.


Part 2: The Stock

  1. To the same pan, add generous amount of butter

2. Add the bay-leaf, chopped onions and garlic and sauté for a few minutes.

3. Add some of the sliced mushrooms and sauté for a few minutes until soft

4. Add 2 cups of water, cover with a lid, and cook for 10 minutes

5. Once cooled down, strain the stock and transfer the remaining vegetables to a mixer jar.

6. Add corn starch and a cup of milk to the mixing bowl and blend the mixture.

Part 3: The Soup

  1. Take the same pan, and add the strained Vegetable stock and the blended Mushroom paste

  2. Bring the Soup to boil and add salt and pepper to taste. As a final step, add the sautéd mushrooms

Transfer to a bowl, garnish with Coriander and serve hot. Bon Appétit!
